Golden Tilefish A rich white fish with a firm texture. A cold-water fish from the Gulf of Mexico! Typical size is 4 to 20 lbs. |

Katsuo, Hagatsuo - Bonito, Little Tuny A full flavor fish with a firm texture. A definite departure from the norm. Typical size is 2 to 5 lbs. |

Kanpachi - Amberjack, Almaco Jack A light pink meat with a firm texture and rich buttery flavor. Typical size is 10 to 30 lbs. |

Kimme - Red Snapper White meat with a very mild flavor. Texture is medium to soft. IKE JIME brings this fish to its full potential. Typical size 2 to 5 lbs. |

Hiraaji - Bluestripe Jack, Blue Runner Light pink color. Full flavor and firm texture. The belly section is very rich. One of my personal favorites. Typical size is 1/2 to 3 lbs. |
