          Sashimi and Sushi Grade Fish

Artisan style fish refers to the individual process each fish goes through to become sashimi grade, much in the same way artisan breads are crafted instead of mass produced.  We apply this concept during the harvesting process  to preserve near perfect quality.

Our fishermen undergo rigorous training in IKE JIME and other techniques as adapted for each species that they catch.  Some fish are simply enhanced by the process and on others it has a dramatic effect,  presenting an entirely new flavor and texture profile. 

We have a deep respect for ancient fishing traditions.  Like the craftsman, our tools are specific to their purpose.  We even control the type of water used to clean the fish.  No chemicals, CO, tasteless smoke, or other preservatives are allowed near our fish.
